Smoking Roasts

Ingredients

  • Sirloin tip roast. If using a different type of meat, chtype temperature requirements.
  • Seasoning. I like Voodoo seasoning.
  • 2 tbsp apple cider vinegar
  • half cup of orange juice
  • Basket of smoking woodchips
  • Disposable aluminum pan
  • Aluminum foil

Instructions

    Tip: Seal grill with gasket (around lid) for retaining heat
  1. Move roast to fridge 24-48 hours before beginning
  2. Season thoroughly. Let sit while preparing the grill
  3. Fill aluminum pan with apple cider vinagar, orange juice, and top off with water. Place on the "cold" side of grill
  4. Start charcoal grill and place lid on grill. Bring to 225-250 degrees F and clean the grate
  5. Place woodchip-filled smoking basket on top of coals
  6. Place roast on "cold" side of grill. Adjust vent so that it vents off the cold side
  7. Adjust the top and bottom vents such that they are about 1/4 open
  8. Monitor temperature and keep steady at 225-250 degrees F. Cook for 2 hours
  9. Remove roast from grill and wrap in foil. Place back on grill for 2-4 additional hours or until internal temperature reads 135 degrees F. Temperature may vary based on type of meat.
  10. Allow to rest for 30 minutes
  11. Thinly slice and serve
