Lentil Chickpea Curry
Ingredients
- 2: medium onion (chopped)
- 2: garlic cloves (chopped)
- 3: serranos with seeds (chopped)
- 1: cup of milk
- 1 bunch: cilantro
- 3 cups: white rice
- 2 tablespoons: coconut oil
- 0.5 cups: chopped carrots
- 12 oz: tomato paste
- 3.5 cups: water
- 18oz can: coconut water
- 2 cups: dried lentils
- 2 16 oz cans: chickpeas
- 1 teaspoon: curry powder
- 1 teaspoon: ginger
- 0.5 teaspoon: turmeric
- 1 teaspoon: cumin
- 1 teaspoon: salt
Instructions
- Add and heat coconut oil
- Fry chopped onion
- Add spices
- Fry the other veggies (except the cilantro)
- Add water, milk, coconut water, tomato paste.
- Bring to boil
- Add lentils. Simmer with lid on until lentils are soft
- Cook the white rice according to the directions provided
- Add chickpeas
- Enjoy! Serve curry with white rice and garnish with cilantro
