Lentil Chickpea Curry

Ingredients

  • 2: medium onion (chopped)
  • 2: garlic cloves (chopped)
  • 3: serranos with seeds (chopped)
  • 1: cup of milk
  • 1 bunch: cilantro
  • 3 cups: white rice
  • 2 tablespoons: coconut oil
  • 0.5 cups: chopped carrots
  • 12 oz: tomato paste
  • 3.5 cups: water
  • 18oz can: coconut water
  • 2 cups: dried lentils
  • 2 16 oz cans: chickpeas
  • 1 teaspoon: curry powder
  • 1 teaspoon: ginger
  • 0.5 teaspoon: turmeric
  • 1 teaspoon: cumin
  • 1 teaspoon: salt

Instructions

  1. Add and heat coconut oil
  2. Fry chopped onion
  3. Add spices
  4. Fry the other veggies (except the cilantro)
  5. Add water, milk, coconut water, tomato paste.
  6. Bring to boil
  7. Add lentils. Simmer with lid on until lentils are soft
  8. Cook the white rice according to the directions provided
  9. Add chickpeas
  10. Enjoy! Serve curry with white rice and garnish with cilantro
