White Bean Chili
Ingredients
- vegetable oil
- 1 yellow onion diced
- 1 green pepper diced
- 2 jalapeno peppers diced
- 6 gloves of garlic
- 2 tablespoons of cumin
- 1 28oz can of diced tomatos
- 2 15oz cans of white beans
- 3 cups of vegetable or chicken stock
- 2 limes
- 1 cup of chopped cilantro
- salt to taste
Instructions
- Place oil, onion, green pepper, and jalapenos in large saucepan and saute over medium heat for 7-8 minutes.
- Add garlic and cumin. Cook for 2 more minutes.
- Add tomatoes, beans, and vegetable/chicken stock and bring to a boil over high heat.
- Reduce the heat to medium and cook, covered, for 25 minutes.
- Add the lime juice, cilantro, and salt
