White Bean Chili

Ingredients

  • vegetable oil
  • 1 yellow onion diced
  • 1 green pepper diced
  • 2 jalapeno peppers diced
  • 6 gloves of garlic
  • 2 tablespoons of cumin
  • 1 28oz can of diced tomatos
  • 2 15oz cans of white beans
  • 3 cups of vegetable or chicken stock
  • 2 limes
  • 1 cup of chopped cilantro
  • salt to taste

Instructions

  1. Place oil, onion, green pepper, and jalapenos in large saucepan and saute over medium heat for 7-8 minutes.
  2. Add garlic and cumin. Cook for 2 more minutes.
  3. Add tomatoes, beans, and vegetable/chicken stock and bring to a boil over high heat.
  4. Reduce the heat to medium and cook, covered, for 25 minutes.
  5. Add the lime juice, cilantro, and salt
